- heat 1 tbsp olive oil in a medium-large sized pan

- bring everything to a simmer and then make 6 small wells in the sauce and crack 1 egg in each
- cover the pan and let the eggs cook for 2-3 mins, then uncover and sprinkle 1/4 cup low fat feta cheese
- cover the pan again and let the eggs and cheese continue to cook for another 2-3 mins until egg whites are cooked
- top with avocado slices, fresh ground black pepper, 2 tbsp fresh chopped cilantro, and 2 tbsp fresh parsley leaves
- use a slice of fresh ciabatta for dipping, and enjoy!
