Roasted red pepper and goat cheese sandwich with mushrooms, onions, and arugula with a drizzle of fig glaze! Hope you enjoy ❤️
recipe (makes 1 serving)
- preheat oven to 450F
- cut one red bell pepper in half and remove its seeds
- drizzle 1 tsp olive oil over red bell peppers and place onto a parchment lined sheet pan
- place into the oven to roast for 25-30 mins until soft and blistered
- while the bell pepper cooks toast 2 slices of multigrain bread, and heat a frying pan with olive oil spray
- add 1/4 cup sliced mushrooms and 1/4 small yellow onion cut into slices
- sauté for 5-8 mins stirring continually, then add 1 tbsp balsamic vinegar and cook the veggies for another 3-5 mins
- add 1 tbsp goat cheese in a thin layer to 1 of the slices of bread
- then add the roasted bell peppers, mushrooms and onions, and a handful of arugula
- drizzle fig glaze onto the arugula and lastly top the sandwich with the second piece of bread
- wrap in parchment paper to keep the ingredients from falling out, cut in half and enjoy
