Have you ever made your own breadcrumbs? 🍞 Most store bought breadcrumbs are high in sodium, and crumbling a piece of whole wheat bread is a great way to limit sodium content (and add fiber)! Give this salad with balsamic roasted brussels sprouts, dates, cucumber, feta, and crispy baked cod a try. Hope you enjoy ♥️
recipe (makes 1 serving)
- preheat oven to 425F
- pour 8 oz bag of shaved brussels sprouts onto a sheet pan and spray with olive oil
- add 1 tbsp balsamic vinegar, a pinch of black pepper and red pepper flakes, and toss to coat
- place into the oven to roast for 18-20 mins until crispy and browned
- prepare the 5 oz filet of cod by first dipping in egg wash, then all-purpose flour, then egg wash, and set aside
- crumble 1/2 slice multigrain bread onto a small casserole dish or sheet pan and add 1/2 tsp dried oregano
- coat the cod in multigrain bread crumbs and place into the oven for 12-15 minutes
- add roasted brussels sprouts to a serving bowl and top with 2 chopped dates, 1/4 cup chopped cucumber, 2 tbsp hummus, and 2 tbsp nonfat feta
- lastly add the crispy baked cod, and enjoy!
