This a ricotta and pear sandwich with mint is delicious and refreshing 🌱🍐 Hope you enjoy!
recipe (makes 1 serving)
- toast 2 pieces of multigrain bread (I used the seeduction bread from whole foods)
- add 2 tbsp part skim ricotta to one side of each slice of toast
- season with red pepper flakes and fresh ground black pepper
- top one side of the ricotta toast with 6-8 thin slices of pear, a thin layer of sliced cucumber, and a handful of arugula tossed lightly in 1 tbsp balsamic vinegar and 1 tsp olive oil with fresh ground black pepper
- top the other side of the ricotta toast with 1 thinly sliced radish and 4-5 fresh mint leaves
- wrap in parchment paper, cut in half, and enjoy!
