recipe (makes 1 serving) 1. preheat oven to 400F 2. place trout filet on a 12x16” piece of parchment paper, along with 1/2 cup cherry tomatoes, 4 cauliflower florets, and 3 garlic cloves 3. drizzle 1 tbsp olive oil over trout and veggies 4. place 2-4 fresh lemon slices on top of trout, along with 3-4 sprigs of fresh thyme and dill 5. add a dash of fresh ground black pepper and a pinch of paprika 6. roll parchment paper into a half moon shape and place into the oven for 10-12 mins, take out of the oven and poke a hole in the parchment paper pouch 7. remove the lemon slices along with the thyme and dill sprigs, and enjoy! option to plate with brown rice or quinoa to add a whole grain nutrition per serving: 280 calories, 17g protein, 9g carbohydrate, 18g fat, 3g saturated fat, 3g fiber, 590 mg sodium.
