Heart healthy trail mix with cinnamon roasted chickpeas! Try the recipe below, hope you enjoy ❤️
recipe (makes 10 servings)
- drain and rinse 1/2 can chickpeas (~8oz)
- spray olive oil onto chickpeas and toss to coat
- place into an air fryer basket at 390F for 10 mins (or roast in the oven at 350F for 25 mins) to cook 80% of the way
- take the chickpeas out and add 1 tsp honey and 1 tsp cinnamon and toss to coat
- place chickpeas back into the oven for another 3-5 mins in the air fryer (or 5-8 minutes in the oven) to get a crispy cinnamon outer layer
- take out of the oven and let chickpeas cool to room temp
- add roasted chickpeas to a large mixing bowl along with 1/2 cup unsalted walnuts, 1/2 cup dark chocolate covered almonds, 1/2 cup unsalted pistachios, 1/4 cup corn nuts, and 1/4 cup dried fruit
- option to portion these into baggies to eat throughout the week as snacks! (1 serving = 1/4 cup trail mix)
