recipe (makes 6 servings)
- preheat oven to 350F
- crack 4 eggs and 4 egg whites into a 9x13” casserole dish
- add 1 container (~5 oz) of non-fat plain greek yogurt
- whisk together eggs and greek yogurt until combined
- add 1 diced red bell pepper and 1/2 diced red onion to egg mixture
- season with 1 tsp fresh ground black pepper and 1/2 tsp red pepper flakes, and mix to combine
- cover casserole dish with foil and place into the oven to bake for 35-40 mins until eggs are fully cooked through
- place 6 whole wheat english muffins in the oven to toast for ~5 mins
- take egg souffle and english muffins out of the oven and let cool for 5 mins
- add 2 tbsp fresh chopped parsley to egg souffle, and cut into 6 even squares
- create 6 breakfast sandwiches by adding 1 oz mozzarella cheese to one side of each english muffin, then top with egg souffle, wrap into foil and place into the freezer
- option to add arugula for more fiber and hot sauce for flavor, and enjoy this heart healthy breakfast sandwich!
