Trust me, you’ll be craving broccoli once you try this heart-healthy broccoli caesar with a creamy greek yogurt-based dressing! Try the recipe below, hope you enjoy ❤️
recipe (makes 2 servings)
- preheat oven to 375F
- loosely chop 2 heads of broccoli and add broccoli florets and 1/2 can of chickpeas to one sheet pan with olive oil spray
- place into the oven to cook for 35-40 mins until broccoli are browned and chickpeas are crispy
- while the broccoli cooks make the caesar dressing by whisking together 3 tbsp nonfat plain greek yogurt, 1 tbsp olive oil, 1 tbsp minced capers, 1 tsp dijon, 1 tsp parmesan cheese, 1/4 tsp minced garlic, juice of 1/2 lemon, and a pinch of black pepper
- after 35-40 mins add crispy broccoli to a bowl
- drizzle the homemade caesar dressing over the broccoli and chickpeas
- add 1 tbsp pine nuts to a pan on high heat while continually stirring the pine nuts for 3-5 mins until lightly toasted
- add pine nuts to broccoli and chickpeas along with zest of 1/2 lemon
- top with a sprinkle of parmesan and enjoy!
