this greek salad sandwich with sweet chili tofu is so colorful and flavorful! it’s also a great way to make 1/2 of your plate non-starchy vegetables. hope you love it ♥️
recipe (makes 1 serving)
- add 2 cups of leafy greens to a large bowl to make the base of your salad
- next add 1/4 cup diced tomato, 2 tbsp reduced fat feta cheese, 2 tbsp diced red onion, 1/4 cup pepperoncini, and 2 tbsp balsamic vinaigrette
- toss everything to dress and set aside
- toast 2 slices whole wheat bread (or 1 large slice cut in half)
- to 1 side of the toasted bread add 2 tbsp hummus and 3-4 thin slices of avocado
- top with a pinch of black pepper and red pepper flakes
- add 2 oz of tofu about 1/4” thick (I used whole foods sweet chili tofu) and top with 1-2 scoops of salad
- top with the other slice of bread and wrap in parchment paper to keep everything together
- plate with the rest of the salad, and enjoy!
