Heart healthy dark chocolate peanut butter rice cake! Make these for a sweet, protein-filled snack or dessert. Try the recipe below, hope you enjoy ❤️
recipe (makes 5 servings)
- crumble 2 salt-free rice cakes into a medium mixing bowl
- add 1/4 cup unsalted creamy peanut butter, 1 tbsp maple syrup, and 1/2 tsp vanilla extract and mix
- using a 1-inch cookie scoop (or your hands) mold the peanut butter rice into 1-inch balls and set on sheet pan lined with parchment paper (should make around 4 balls)
- place sheet pan into the freezer for 5 mins while you microwave about 20-25 dark chocolate melting wafers (equivalent to ~60g) in a small glass bowl
- take the sheet pan out of the freezer and dip each rice cake ball into the dark chocolate and dip until fully coated in dark chocolate
- place the dark chocolate covered peanut butter rice cake balls back onto the sheet pan and into the freezer for ~30 mins until chocolate is hardened, and enjoy!
