Save these blueberry baked oatmeal bars to make to eat throughout the week for a fiber-rich balanced breakfast! hope you enjoy ♥️.
recipe adapted from What Molly Made makes 9 servings
- preheat oven to 350F
- to a large mixing bowl add 3 cups rolled oats, 2.5 cups milk (I used 2% milk but you can use any milk you like), 2 large eggs, 1/4 cup maple syrup, 2 tsps vanilla extract, 1/5 tsps baking powder, 1 tsp cinnamon, 1/2 tsp sea salt, 1 scoop protein powder (I used Vital Proteins)
- mix together and pour into a 9x9” casserole dish lined with parchment paper
- top with 1/2 cup fresh blueberries and place into the oven to bake for 40-45 minutes
- cut into 9 pieces, save the bars in the fridge to eat for the week, and enjoy!
nutrition per serving: 189 kcals, 8g protein, 26g carbohydrates, 4.5g fat, 1.5g sat fat, 3g fiber, 135 mg sodium.
