This avocado egg salad sandwich is easy to make and full of protein! Hope you love it ♥️
recipe (makes 1 serving)
- preheat the oven to 350F.
- crack 2 eggs into a ramekin sprayed with olive oil.
- whisk the eggs together and cover the ramekin with a piece of tin foil.
- place into the oven to bake for 20 mins until egg is cooked all the way through.
- take the cooked egg out of the ramekin and loosely chop eggs into bite-sized pieces.
- place chopped eggs into a medium-sized mixing bowl along with 1/2 of small avocado cut into 1/2” thick cubes.
- add 1 tbsp diced red onion, 1 tsp dijon, 1 tsp fresh squeezed lemon juice, 1-2 tbsp fresh chopped dill, 1 pinch of black pepper and red pepper flakes.
- toast 2 slices of sourdough bread, and place avocado egg salad onto 1 slice of the bread along with 6-8 lettuces leaves.
- top with the second piece of bread, cut in half, and enjoy!
